Don't overthink it. What series or run in a long-running series do you go back to again and again? For me it's the 1981 incarnation of Ka-Zar. An odd choice, I know, but it combined high adventure, the alien world feel of classic Flash Gordon, romance, and humor in a way that has influenced everything I've read (and written) since. It is my absolute favorite run in comics ever, and I still remember the validation I felt as a kid when my comics-hating mom started reading it. "This one's good," she told me. "I want to know if Kevin and Shanna ever permanently get together."
So what's your fav, ever?

Amazing Spider-Man #1-100
Blue Beetle, by Keith Giffen and John Rogers
Walt Simonson's Thor
I'm sure I'll think of some others, but those make a good start.
Neil Gaiman's The Sandman
Preacher by Garth Ennis & Steve Dillon
Hellblazer by everybody
Lee/Kirby Fantastic Four
Ditko Spider-Man
Some (not all) Lee Avengers issues
Roy Thomas' Avengers
Steve Englehart's Avengers
Defenders from Marvel Feature#1 until the end of the Nebulon/Headman/Bozos storyline, plus the Six-Fingered Hand storyline form #94-100
Wally Wood's Daredevil issues
Thor from Journey into Mystery#112 to Thor and Hercules helping Firelord fight Ego
Tales of Asgard
Tales of the Zombie
70s revival of All-Star Comics
The Occult Files of Doctor Spektor
The first three that popped into my head were...
Lee/Kirby Fantastic Four
Lee/Romita Spider-Man
Baron/Rude Nexus
If I had to pick one, it'd probably be the Levitz/Giffen/Larocque Legion, from the 280s all the way up to 5 Years Later. You could probably include that first year or so of 5YL, too, since Giffen was involved, but Magic Wars seems a cleaner break.
The ones that had the biggest impact on me were:
Claremont/Byrne X-Men and
Shooter's Avengers (first run)
The series I've re-read the most times is probably Watchmen.
I'm with you Ron on all the below that i didn't delete....
Also I would say ...
The Claremont COCKRUM X-Men
Gil Kane/Roy Thomas Captain Marvel
Adams?Thomas X-Men issues
Levitz writing Giffen drawn LSH
Romita/Lee Spider Man
Gil Kane on Spider-Man / Iron Fist
Ross Andru's Spider-man.
oh...and how about the Treasury Superman Vs Spider-Man ....

Best of the lot I guess would be the Kree Skrull War.
A no-brainer for me: the Silver-Age Justice League---The Brave and the Bold # 28-30; JLA # 1-63.
Giffen and DeMatteis' Justice League
Conway's Justice League of America (before Detroit)
Ordway's Power of Shazam
DeMatteis' Defenders (before the New Defenders)
Busiek and Larson's Defenders
Astro City (especially the first five trades)
Giffen and Rogers' Blue Beetle
Thomas' All Star Squadron
Thomas and Shaw's Captain Carrot and his Amazing Zoo Crew
Miller and Mazzucchelli's Batman: Year One
Legends of the Dark Knight (there's about 2-3 really good stretches of stories throughout the series)
If I had to pick just one, I'd probably go with Astro City.
