Explain "Infinity" style comics to me, please

Fantastic Four Infinity Comic #1, Spine-Tingling Spider-Man Infinity Comic #1, X-Men Unlimited Infinity Comic #1 and a few others.  Who is the intended audience for these non-canon loosely drawn stories, and why are they called "Infinity Comics"?

If these shorter works with less artwork, dialogue and story are to be called "Infinity", does that make their regular line "Infinity and Beyond!"?

Infinity probably comes from the idea that webcomics can be an infinite canvas. These comics are Marvel's attempt to capture what Scott McCloud was talking about here.
